Paying homage to the celestial origins of timekeeping, Matthias has drawn inspiration from the wonders of the night sky, the intricacies of astronomical watchmaking and the natural bounty of the Vallée de Joux, to create a menu of soft cocktails.

CELESTIAL COCKTAILS
An astral odyssey, exploring the colours and forms of the cosmos, with exquisite flavour accents from the Vallée de Joux.
SUN INFINITY
Warm notes play with fresh mint. Spring has arrived in the Vallée de Joux, and this pour feels like a rising sun breaking through the clouds.
Passion fruit juice, honey from the Vallée de Joux infused with homemade saffron, peppermint hydrolat, homemade chamomile soda flavoured with pineapple.
MOON ELIXIR
Just like the night stars themselves, you will be amazed at this cocktail’s different phases -from moments of complete stillness to tide-raising forces. 99% of natural mineral water, with a taste of the moon.
Cold-infused apple trio (red, yellow and green), distillation of kumquat, artisanal Osmanthus flower cordial.
COSMO BLUES
A sophisticated and texturally complex blend, to stargaze between the forests and mountains of the Swiss Jura.
Blueberry juice from the Vallée de Joux, grapes juice fermented, artisanal pin bud cordial, sapin hydrolat and Mirabelle foam.
EARTH ATTRACTION
Crafted with an ever-changing elixir, representing the mysteries of the Earth. It takes time for the full flavor to unfold.
Blue ice ball infused blackcurrant leaves, Elderflower, cold infused grape juice with meadowsweet, William pear puree, fresh lemon juice, clarified with milk.
NATURE COCKTAILS
A sensory journey to the Vallée de Joux, with colours, scents and flavours inspired by its serene world of forests and fields.
VALLEY OF WONDERS
In the quiet of the early morning, a sensory walk through the Valley clothed in fog's misty shroud.
Geranium hydrosol, cold-infused apple juice with fragrant woodruff from the Valley de Joux, verjuice, lemon & thyme-infused honey from the Valley de Joux.
SWEET RUBY
A clash of vibrant red, appealing to refined taste. Resulting in a hypnotic creation to ignite your senses.
Cranberry juice from the Vallée de Joux, fresh raspberry, dry hibiscus & roiboss cherry cold infusion with mineral water, fresh lime juice, rose-infused honey from the Vallée de Joux.
SPICY FOREST
A combination of bitter notes and woody highlights, to honour and savour everything provided by the ground beneath our feet: leaves, flowers, wood, fruits and spices.
Artisanal dry wood-flavoured soda, non-alcoholic white vermouth, verbena from the Vallée de Joux with verjuice, paragon passion pepper cordial.
FUZZY FLOWER
An explosion of flavours, capturing the essence of freshness and Swiss mountains for you to feel rejuvenated.
