Introducing Mathieu Davoine, a rising talent among Chef Chocolatiers, who brings his artistic and bold imagination to Jaeger-LeCoultre’s Made of Makers programme. His unique approach to chocolate-making led to four experimental chocolate delights – including ingredients from the Vallée de Joux – paired with a specially created beverage. At the 1931 Café, guests will embark on a chocolate journey celebrating the origins of the Reverso, with unconventional textures, daring blends of contrasting flavours and surprising visual presentations.

CHOCOLATE ARTISTRY

Encapsulating Mathieu Davoine’s signature style, the chocolate delights he created for La Grande Maison challenge preconceptions and push the limits of what chocolate can be. Praline, truffle, fudge: familiar and unconventional textures combine for and exciting sensory twist. Olive, mushroom, pollen: ‘impossible’ blends of flavours and ingredients reveal new and surprising harmonies. Micro balls, sculptures, trompe-l’oeil : unexpected proportions, shapes and surface finishes create surprising optical illusions.

CELEBRATING THE ORIGINS OF REVERSO WITH CHOCOLATE

With the four chocolate delights that will be offered to Jaeger-LeCoultre’s guests at the 1931 Café - Harmonie de Chocolat, Galop des Bois, Éclat de Caviar and Douceur du Cavalier - Mathieu Davoine pays homage to the origins of the Reverso by taking visual inspiration from the world of polo, and to the home of Jaeger-LeCoultre by incorporating ingredients from the Vallée de Joux.

I cannot think of any other single ingredient that offers so much artistic possibility thanks to all of the forms it can take – powder, liquid, cream, foam, jelly, crunchy solid and more. And when you are willing to experiment with flavours and go beyond the conventional blends, there’s almost no limit to the possibilities.

MATHIEU DAVOINE : THE CHOCOLATE CRAFTSMAN

Based in Geneva, Mathieu Davoine is recognised as a rising talent among Chef Chocolatiers. Growing up on his family’s farm near Annecy in the French Alps, he always knew that he wanted to work with his hands, and a fascination with craftsmanship deepened his understanding of the transformative potential of raw materials. Beginning his culinary journey in baking before exploring the world of pastry, he quickly discovered his passion for chocolate. For him, chocolate provides the perfect outlet for his creativity, enabling him to dive deep into the complex process of transforming cacao beans into exquisite chocolate creations, introducing unexpected flavours and artfully exploring and shaping the raw material to create an extraordinary array of forms and textures. Mathieu Davoine’s international experiences – ranging from Bora Bora in French Polynesia to Kuwait – have fuelled his desire to elevate chocolate craftsmanship to new heights.
