4 PASTRIES CELEBRATING THE GOLDEN RATIO
Jaeger-LeCoultre’s collaboration with Nina Métayer began in 2021 with the inauguration of the 1931 Café, for which the celebrated pâtissière created an array of exceptional pastries inspired by the Reverso theme. Named Pastry Chef of the Year three times before she turned 30, Nina is renowned for the visual appeal of her pastries as well as her singular talent for blending evocative flavours in new ways.

THE POETRY OF PERFECT SYMMETRY
The new selection of pastries composed by artist-pâtissier Nina Métayer captures the essence of the Golden Ratio and the Vallée de Joux through flavour, texture and form. Infused with ingredients from the Vallée de Joux – hazelnuts, honey, pine, chestnuts and blackcurrants – each creation evokes the natural harmony and beauty that surround Jaeger-LeCoultre’s home in the Swiss Jura mountains.
ÉTOILE DE CASSIS
For her Étoile de Cassis, Nina has blended art, science and flavour to create a visually stunning piece in homage to the Golden Ratio. Pear and biscuit confit burst forth from a soft chestnut biscuit rounded off with chestnut mousse.
CARRÉ AU MIEL DE FORÊT
Simple, elegant and stylish, Nina’s Carré au Miel de Forêt brings together crispy short crust pastry with subtle milk chocolate to deliver sumptuous textures. Forest honey mousse and lemon cream confit bring harmony in divine proportion.
ELLIPSE DE SAPIN
Nina’s Ellipse de Sapin starts with a tart base which blossoms across the palate with notes of praline and cacao. A chocolate mousse dome, infused with hints of fir, floats serenely atop with a pear and lemon confit bringing perfect balance to each flavour.
SPIRALE DE NOISETTE
Nina has crafted a beautifully symmetric swirl of soft biscuit and hazelnut crunch which balances in perfect proportion atop a creamy centre finished with a light vanilla mousse.
